Howdy Kitchen: Bake Pops?!?


The commercials one can see when staying up after the evening news.  :)

Usually they are lame.....but I saw a pretty awesome one tonight!


 


I'm a big fan of Bakerella and all her cake pops.  Her creations and ideas are just fabulous!

With the typical cake pops, you bake a cake as normal, then crumble it up and add a tub of frosting to it.  Then eventually form the cake into the shape that you want.  Balls, mini cupcakes, Christmas trees, whatever.

With the new Bake Pop pan, it bakes the cake mix in the pop {ball} form. 

The ease of the pop shape makes me want to try these.  But, I wonder how they will taste compared to the other typical cake pops. 

So Bake Pops....if you are reading this, feel free to send me a set of the pans to try!

Otherwise, I'm guessing I will be adding this to my Amazon wishlist.  

{Shoot.  Now I am in the mood for cake!}

Howdy Kitchen: Pumpkin Cake

On Monday, some friends gathered together at my place to have a little party for a friend.  I made chicken enchilada soup.....I love that stuff!  For dessert, it was requested to have pumpkin cake.  Specifically, the pumpkin cake recipe I left on my desk at work, and have no idea where I got it.  But, we still had pumpkin cake!

I did a little improv baking.  :) 

I found a spice cake mix in my pantry, grabbed a can of pumpkin, 3 eggs, and some water (would have used milk....but I didn't have much left and you just might want milk to go with the cake).

I followed the instructions on the box, but left out the oil.  Instead, I added the can of pumpkin.  I have no idea if it was too much or not, but I sure liked it.  It was very moist and delicious! 

For the frosting, I creamed together 1 stick (1/2 cup) of butter (yes, I used real butter) and 1 block (8oz) of cream cheese.  I then poured in some vanilla.  Once that is all mixed up nicely, I added 1 lb of powdered sugar.  And to top all that off, I added a couple few shakes of cinnamon and pumpkin spice.

I made the cake in a bundt pan, due to convenience.  Because it was still a little warm when I poured the frosting on, I do believe that it soaked in to the cake a little bit.  In the end, there was plenty of frosting.  (So what I did above could even be cut in half again.)  But having the extra frosting was nice, since we all added it to the side of the cake, so there was icing in every bite!

Since I had some leftover after the Supper Club party gathering, I took it with me to Bible study on Tuesday night.  But this time, the hostess had Schwans pumpkin caramel praline something like that ice cream.  It was a GREAT addition to the cake.  YUM!  I think that cinnamon ice cream would also be great with this.  However, I'll have to make the cake again to find out, since I took the last piece last night.  :)

And of course, I wanted to get a picture....but forgot!

But if you are looking for a cake that is very simple, yet very delicious, this is the go to cake.    The best part, people will think that is made from scratch.  Or they will compliment the cake like it is.  Oops!  If only they knew how simple it was to make.  :)

Howdy Kitchen: Orange Dream Yogurt Cake


Cake:
white cake mix
3 egg whites
3/4 cup water
1/2 cup applesauce
1 - 6 oz yogurt (any flavor....I used orange dream)

Topping:
1 - 8 oz Cool Whip [fat free if you want]
1 - 6 oz yogurt (same flavor used in cake)
1 small jello [sugar free if desired] (same flavor as yogurt)

Oven 350*, slightly spray 9x13 pan.
Bake 35-40 minutes [or until done]

While cake is baking, mix yogurt and jello together.....let set!
When cake is cool, add cool whip to yogurt and jello mixture.
Frost the cake.
Refrigerate and.......

Howdy Kitchen: Butterscotch Bliss

Thanks to my friend Joy and her fabulous cake recipe, here is an altered version I made. I have others in mind...but just doing it one cake at a time.


Butterscotch Bliss


1 package yellow cake mix
2 small boxes butterscotch pudding
1 1/2 cup water
1/2 cup oil
4 eggs
1 tsp (or so) vanilla


Mix all ingredients together.
Follow normal baking instructions on the box.
Frost and decorate as desired.


Warning...this cake is very moist, but very delicious!

Enjoy.

Day of Bashes!

Happy Father's Day to all you dad's out there. If you would like to see what I made for my dad, head on over here (my craft site) to check it out.

Since my sister and her family are here from China, we are having a bit of a party here at the farm. Guest list: Grandma and Grandpa Mitchell, Aunt Nancy & Uncle David, Great Aunt Mildred, Adam & Lindsey, mom & dad, 5 from China, and me.....and via internet: Gina & Jay!!!
For dinner, we had a fantastic ham glaze/juice that I made that I'll post about later.

Here's where the second bash of the day comes in. Around 3pm our time, 10pm Germany time, Gina called to tell dad Happy Father's Day. It was also around the time that we were going to eat Jac's birthday cake that mom and I worked on (it will be posted at the very bottom). So we logged on, and did a video chat. Jay and Gina got to see the birthday cake, the soon-to-be birthday girl, and they even sang Happy Birthday with us. So even though they are half a world away from us and seven hours time difference, they still got to be 'here' at the farm for about 30 minutes. (It was past Gina's bedtime.)

Now on to the cake. Jacquelyn is in LOVE with the Disney Princesses. Her favorite princess is Sleeping Beauty, because she's pink. Enough said. If it's pink, she likes it. For her cake, she also wanted a Sleeping Beauty cake. And boy, was that difficult. Mom made and froze the dress form cake where you just insert the torso of a doll in to the cake. (People might make fun of it, but it works......and much cheaper than buying one.) I asked Jac what colors she wanted, and here is what she said....pink dress, with golden hair and a golden necklace with pink shoes. Well, we tried to accommodate. First problem....didn't have just a doll torso, so we used a Barbie. By using a real Barbie, we had to add two more layers to the cake so her legs would fit. In the end, it turned out just fine. Jac liked it, and it tasted great. But with decorating a cake at 1opm at night, after a busy day of making food and other stuff, we just wanted to get it done.
