Howdy Kitchen: Sausage Pancakes

Last week I posted about Bacon Pancakes that I found on Pinterest

While at the farm, I thought it would be a good time to give these a try.  I stopped by the grocery store on my way there to get some things for mom, and made sure to pick up some sausage patties.

I browned the patties and got them nice and hot.

After browned, I put them on a paper towel to absorb some of the grease.

Then I put them on the griddle.

I then poured the batter over one of them.  But  I decided I'd rather have the pancake batter be on the bottom, and placed the sausage patties on top.

For one of them, I thought I would cover the pattie completely, so it was enclosed in the pancake.  {Now that I look at it, I have no idea why I didn't add more batter to the top.}


 When it was finally time to flip the first one over, I liked how it looked.  It kind of reminded me of fried eggs.


After I got the first 4 off the griddle, I decided to just pour the batter, put a sausage pattie on top, and call it good.

Those of us who ate these, sure enjoyed them!  I will be making them again. 

But next time, I think I might try ground sausage instead, and just mix it in the batter.  Or do the suggestion of crumbling the bacon in the batter.  Or I'll get a bigger sausage pattie.  {These guys were quite small.}
