Howdy Kitchen: Scotcharoo Bites


A few months ago, mom started making scotcharoos bites....
and they are great! 

I finally decided to make these last Saturday.
I'm glad I was free the whole morning.  They took MUCH longer than I expected.
I am use to dumping the mix in a Tupperware container and letting them cool. 
Then pour the melted chips over them and cool.  Then cut. Then eat.

Not with these guys.  After getting everything mixed up, it is time to roll them in to balls. 
I ended up having about 55.  This was only 1 batch! 

I am sure I will make them again.  I just have to make sure I have the time to get them done.


Scotcharoo Bites
6 cups Special K
1+ cup sugar
1+ cup white corn syrup
1+ cup peanut butter
1 cup chocolate chips
1 cup butterscotch chips

* Set aside the 6 c Special K in a LARGE bowl.
* Melt the 1+ c of sugar and corn syrup together until the sugar is completely melted.
* Add the peanut butter and stir until melted/mixed together.
* Pour mixture over cereal and get to stiring.

Immediately begin making the balls and place on wax paper to cool.

Once balls are cooled, melt 1 c of chocolate and butterscotch chips together until all the chunks are gone.
Dip the top of the ball in to the chocolate an place back on wax paper to cool.

[If your hands get too sticky while forming the balls, get your hands just a little bit damp.]

YUM. I'm glad you said they take a long time, otherwise I would surely be trying these out with Audrey this afternoon! We'll wait for a weekend when we have more time...can't WAIT to try these!!!

These look really good. I'm most likely going to use the large PC scoop and keep the bottoms flat and just scoop em out and put em on the wax paper. No need to have perfect balls in my house. They won't last long enough for that much work. Ha.
